Ingredients

250 g margarine
2 1/2 cups sultanas
1 cup sugar
1/2 teaspoon baking powder
1 cup water
2 eggs ( well beaten )
1 cup self raising flour
1 cup plain flour

Instructions

1.In a medium saucepan, add margarine, sugar, sultanas, water and baking powder.
2.Place the saucepan on a medium heat and stir the mixture until the margarine has melted. Once melted, remove the saucepan from the heat and allow the mixture to cool.
3.Once cooled, add the beaten eggs, self-raising flour and plain flour to the mixture and stir until well combined.
4.Preheat oven to 180°C (160°C fan-forced). Grease a 20cm cake tin with margarine and then line the base with baking paper.
5.Pour the cake batter into the prepared cake tin and bake for approximately 1 hour or until a skewer inserted into the centre of the cake comes out clean.
6.Remove from the oven and allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
