1 1/2 kg blade roast ( bolar blade specified )
4 garlic cloves ( finely chopped )
500 g carrots
1 parsnip
500 g potatoes
4 bay leaves
30 g butter
1 tablespoon olive oil
3 tablespoons brandy
250 ml apple cider vinegar ( good quality )
2 cups beef stock

Instructions

1.Preheat the oven to 150°C.
