Instructions

1.Preheat the oven at 350°F.
2.In a medium bowl, combine the thinly sliced apples with the sugar and lemon juice, and mix.
3.In a saucepan over medium heat, melt the butter and add the cream cheese, stirring well to combine.
4.In a separate small bowl, whisk together the instant vanilla pudding mix and milk, and add the mixture to the cream cheese mixture.
5.Add the lemon zest to the cream cheese mixture and heat over low heat for one minute.
6.Spread the apple mixture onto the bottom of the pre-baked pie crust.
7.Pour the cream cheese mixture over the apples and spread evenly.
8.Bake for about 50 minutes or until the pie is golden brown.
9.Let the pie cool to room temperature.
10.In a small microwave-safe bowl, heat the apricot preserves for about 30 seconds or until they become thin in consistency.
11.Using a pastry brush, spread the warm apricot preserves over the top of the pie.
