Ingredients

Instructions

1.Cut the bitter melon in half lengthwise and remove the seeds. Slice the bitter melon into thin slices and sprinkle with 2 teaspoons of salt.
2.Rinse the bitter melon under cold water to remove the salt. Squeeze out excess water.
3.Cut the onion in half and slice thinly. Beat the eggs in a bowl.
4.Heat a wok over high heat. Add sesame oil, thinly sliced pork, and stir for 1 minute.
5.Add the onion, bitter melon, and bean sprouts into the wok. Stir-fry for 2-3 minutes.
6.Pour the eggs over the ingredients in the wok and stir-fry for an additional 2-3 minutes.
7.Season with 1/4 teaspoon of salt and pepper.
8.Garnish with dried bonito flakes and serve with rice.
