Ingredients

1 1/2 pounds whole pork belly
1/2 cup soy sauce
1/2 cup packed brown sugar
1/2 cup water
1/2 cup mirin ( Japanese sweet wine )
2 teaspoons ground ginger
1 clove garlic , or to taste

Instructions

1.In a pot, place the pork belly and enough water to cover. Bring to a boil for 5 minutes, then drain the water.

3.In a pan, place the pork belly and add the sauce mixture. Use low heat to reduce the sauce, about 20-25 minutes.
4.After the sauce is reduced, increase the heat to medium-high to caramelize the pork belly. You can flip the pork belly once or twice, and continue to cook for another 5-7 minutes until it becomes brown and shiny.
5.Remove the pork belly from the pan and let it rest for a few minutes. Cut into slices and serve with the sauce.
