Ingredients

2 pieces dried shiitake mushrooms , soaked in water for 20 minutes
2 tablespoons hijiki seaweed , hydrated
75 g salt pork
50 g okinawa carrots
2 teaspoons ginger
1/2 tablespoon sake
1/2 tablespoon soy sauce
1/4 teaspoon salt
1 cup shiitake water
1 cup dashi stock
1/2 cup japanese mugwort ( yomogi )

Instructions
