Ingredients

1/3 piece scallion
1/3 piece carrot
1/3 piece bitter melon
1/2 teaspoon salt
1 garlic clove , grated
3 tablespoons scallions , minced
4 tablespoons miso
2 tablespoons awamori
2 1/2 tablespoons sugar
1 tablespoon sesame oil
250 g ground pork
2 teaspoons broad chili bean paste ( doubanjiang )
1/2 cup water
200 g okinawa soba noodles
1/2 teaspoon sesame oil
3 drops chili oil ( layu )
Okinawan cuisine is strongly influenced by Chinese culture and is characterized by the use of local ingredients. Jaja soba is a popular dish in Okinawa, typically made with a meat and miso-based sauce served over crispy noodles. This version includes kimchi and bitter melon, adding a spicy and bitter note to the dish. It is a comforting and satisfying meal, perfect for a chilly evening at home.

Instructions

1.In a bowl, mix the cucumber, scallion, carrot, bitter melon, and salt. Let it sit for 5 minutes.
2.Mix the garlic, scallions, miso, awamori, sugar, and sesame oil in a separate bowl.
3.Fry the ground pork in a skillet over high heat.
4.Add the broad chili bean paste (doubanjiang) and fry until fragrant.
5.Add the mixture from step 2 and fry until the pork is well coated.
6.Add the water and simmer for 3-5 minutes.
7.Cook the okinawa soba noodles according to the instructions on the package.
8.Toss the noodles with the sesame oil and layu chili oil.
9.Serve the noodles topped with the pork sauce and the cucumber mixture.
