Ingredients

10 Kirby cucumbers , trimmed and halved
8 cups water
1 cup coarse sea salt
Sauce Mixture :
1 cup Korean red pepper flakes ( gochugaru )
1/2 cup water
1/4 cup fish sauce
2 tablespoons white sugar
2 tablespoons minced garlic
2 teaspoons minced ginger
1 tablespoon salted fermented shrimp ( saewujeot )
2 cups garlic chives , cut into 1/2-inch pieces
1 radish , cut into matchstick-size pieces , or to taste
1 pinch sesame seeds , or to taste
Oi Sobagi, also known as Korean Cucumber Kimchi, is a popular side dish in Korean cuisine. It is made using Kirby cucumbers that are soaked in a brine with coarse sea salt before being stuffed with a flavorful sauce mixture. The sauce is made with Korean red pepper flakes, fish sauce, garlic, ginger, and other seasonings. Once the cucumbers are stuffed, they are left to ferment for a few days before being served. Instructions

1.Cut the cucumbers in half crosswise and then cut them in half lengthwise.
2.Fill a large bowl with the water and mix in the salt until it is completely dissolved.
3.Add the cucumbers to the bowl and cover with a plate to keep them submerged in the brine.
4.Let the cucumbers soak in the brine for about 6-8 hours.
5.Drain the cucumbers and rinse them well. Squeeze out any excess water.
6.In a large bowl, mix together the red pepper flakes, water, fish sauce, sugar, garlic, ginger, and salted fermented shrimp.
7.Add the garlic chives and radish to the sauce mixture and mix to combine.
8.Stuff the cucumbers with the sauce mixture and sprinkle with sesame seeds.
