Ingredients

16 ounces frozen corn , husked ( on the cob or off ) or 4 ears fresh corn , grilled
1 tablespoon butter , melted
1 tablespoon lime juice , fresh is best- i use half of a lime
3 tablespoons epazote , chopped , if you can get it or 1/4 cup cilantro , chopped
1 green chili pepper ( optional )
1 chipotle pepper , minced ( optional )
1 teaspoon salt
lime wedge
ground dried chilies or chili powder
parmesan cheese
epazote or cilantro , chopped

Esquites is a popular Mexican street food that has become a trendy appetizer in the US. It's essentially buttery corn that has been mixed with lime juice, chili pepper, and herbs or spices. Instructions

1.If using fresh corn, grill the corn until slightly charred and heated.
2.In a bowl, mix the melted butter, lime juice and salt together.
3.Cut the kernels off the corn cobs.
4.Add the corn, chopped epazote or cilantro, and minced peppers to the bowl with the butter mixture and stir to combine.
5.Divide the mixture into bowls.
6.Top each bowl of corn with a squeeze of lime juice, a sprinkle of ground dried chilies or chili powder, and parmesan cheese.
7.Garnish with additional chopped epazote or cilantro, salt, and pepper, to taste.
