8 eggs
240 ml double cream
125 g gruyere cheese , finely grated
nutmeg , ground
pepper , ground
Oeufs En Cocotte is a traditional French dish that is served as a breakfast dish but can also be used as a light lunch or dinner meal. This recipe is a variation of the traditional dish with the addition of Swiss cheese. This dish is a delicacy of soft baked eggs, which are also commonly referred to as “eggs in pots.” The dish is cooked using a bain-marie technique where the ramekins are placed in a larger dish filled with water to cook evenly.

Instructions

1.Preheat your oven to 180C/160C fan/gas 4
2.Boil a kettle. Break the eggs into a jug and beat gently with a fork, then stir in the cream and half the cheese. Season with a good pinch of nutmeg and pepper.
3.Divide the mixture between 4 ovenproof ramekins. Place the ramekins in a deep roasting tin
4.Pour boiling water into the roasting tin to come halfway up the sides of the ramekins.
5.Bake in the oven for 15 mins, then scatter the remaining cheese over the top and return to the oven for a further 5 mins until the cheese is melted, the whites of the eggs are set and the yolks are still runny.
6.Remove from the oven and leave to cool for a few minutes before serving.
