Ingredients

5 lbs northern pacific octopus
10 cups water
1/4 cup sea salt
2 pieces medium fresh gingerroot
2 cups medium fleshy tomatoes
1 teaspoon crushed hot chili pepper
1 teaspoon apple cider vinegar
1 bunch cilantro leaf
1 teaspoon lime juice
1 teaspoon powdered cumin
1 teaspoon grated fresh gingerroot
3 pieces scallions
1 teaspoon sea salt
Octopus Kilawen is a traditional Filipino dish that is typically made from raw seafood marinated in vinegar or citrus juices, onions, and peppers. Instructions

1.Clean the octopus with cold running water and remove the outer skin and beak.
2.In a large pot, bring 10 cups of water to a boil and add 1/4 cup sea salt.
3.Add the cleaned octopus to the pot and cook for 45-60 minutes or until tender.
4.Remove the octopus from the pot and chop into small bite-sized pieces.
5.In a large mixing bowl, combine the chopped octopus, 2 cups of chopped fleshy tomatoes, 1 teaspoon of crushed hot chili pepper, 1 teaspoon of apple cider vinegar, 1 bunch of chopped cilantro leaves, 1 teaspoon of lime juice, 1 teaspoon of powdered cumin, 1 teaspoon of grated fresh ginger, and 3 pieces of thinly sliced scallions.
6.Mix all ingredients together well and season with 1 teaspoon of sea salt or to taste.
7.Cover the mixing bowl with plastic wrap and let it sit in the refrigerator for at least an hour before serving.
