Ingredients

2 medium onions
2 heads garlic
4 1/2 lbs octopus ( I used baby ones )
2 bunches parsley
2 bunches cilantro
1 teaspoon black peppercorns
4 fresh green serrano chilies
16 cups water
2 cups light beer
6 cups water
16 medium plum tomatoes
1 1/2 medium white onions ( peeled and sliced )
6 garlic cloves ( peeled )
14 fresh green serrano chilies
1/2 cup olive oil
6 garlic cloves

1/2 cup cilantro leaf
1 1/2 teaspoons salt ( to taste )
Octopus in Ranchero sauce is a hearty and spicy Mexican dish that is perfect for dinner. Octopus has a unique texture and flavor, and when combined with the bold flavors of the ranchero sauce, it creates a delicious and satisfying meal. This dish is wholesome and will keep you full for hours, thanks to the high protein content of the octopus. Instructions

1.Clean the octopus under cold running water and remove the beak and eyes.
2.Preheat a large pot of water with onions, garlic, parsley, cilantro, black peppercorns, and green serrano chilies. Add the octopus and beer and cook for 45 minutes to 1 hour or until tender.
3.While the octopus is cooking, roast the tomatoes, onions, garlic, and green serrano chilies on a sheet tray in the oven at 450°F for 20 minutes or until charred. Then, blend everything together until smooth.
4.Heat a large pot with olive oil, and saute garlic. Add the blended sauce to the pot and simmer for 15 minutes. Add the octopus and cook for another 10-15 minutes until the sauce has thickened. Season with salt to taste. Serve the octopus with cilantro leaves on top.
