Ingredients

12 -16 baby octopus ( fresh or frozen defrosted Cleaned To clean see above )
1 onion , chopped
1 small carrot , chopped
1/2 bulb of garlic ( Cut crosswise in 1/2 )
2 bay leaves
2 teaspoons dried oregano
1 teaspoon dried parsley
1 cup red wine vinegar
1 cup water
1/2 teaspoon peppercorn
1/2 bulb of garlic , minced
1/2 cup white balsamic vinegar
hot pepper sauce , to taste
1 small onion , minced
1 tablespoon capers , rinsed and drained
1 tablespoon fresh parsley , minced
1/3 cup olive oil
1 tablespoon fresh lemon juice
salt and pepper

Instructions

1.In a large pot, add the chopped onion, carrot, 1/2 bulb of garlic cut crosswise in 1/2, bay leaves, dried oregano, dried parsley, red wine vinegar, water, and pepper corns.
2.Bring the mixture to a boil and then reduce the heat to low.
3.Add the cleaned baby octopus to the pot and simmer for 30 minutes or until tender.
4.Meanwhile, in a mixing bowl, whisk together the minced garlic, white balsamic vinegar, hot pepper sauce, minced onion, capers, fresh parsley, olive oil, and lemon juice.
5.Once the octopus is cooked, drain off the cooking liquid and transfer the octopus to a mixing bowl. Add the prepared marinade to the bowl, toss until evenly coated, and let it sit for 10 minutes.
6.Preheat the grill or grill pan to medium-high heat. Grill the octopus for 4-5 minutes per side, or until charred.
7.Serve hot with lemon wedges and some extra marinade on the side.
