Ingredients

1 lb top round beef , thinly sliced on the bias into pieces 1 inch , wide by 2 1/2 inches , long
1 tablespoon shaoxing wine or 1 tablespoon dry sherry
1 teaspoon oyster sauce
1 tablespoon cornstarch
1 tablespoon fresh ground black pepper
4 tablespoons black vinegar
2 tablespoons dark soy sauce
1 tablespoon shaoxing wine
2 1/2 tablespoons sugar
3 teaspoons garlic and red chile paste
1 tablespoon oyster sauce
1/4 teaspoon sesame oil
2 teaspoons cornstarch
3 tablespoons peanut oil
1 medium onion , thinly sliced ( about one cup )
3 tablespoons minced fresh ginger
1 head garlic , peeled and minced
1 tablespoon dark soy sauce
1 lb broccoli floret
1/2 cup baby carrots , thinly sliced on the bias
1 tablespoon shaoxing wine or 1 tablespoon dry sherry

Instructions

1.In a bowl, mix together the thinly sliced beef, shaoxing wine or dry sherry, oyster sauce, cornstarch, and fresh ground black pepper.
2.In a separate bowl, whisk together the black vinegar, dark soy sauce, shaoxing wine, sugar, garlic and red chile paste, oyster sauce, sesame oil, and cornstarch.
3.Heat a wok or large skillet over high heat and add 2 tablespoons of peanut oil. Add the onion and cook, stirring frequently, until softened, about 5 minutes.
4.Add the ginger and garlic to the pan and cook, stirring, for 1 minute.
5.Add the marinated beef to the pan in one layer and let it cook, undisturbed, until browned on one side, about 2-3 minutes. Flip the beef and cook until browned on the other side, about another 2-3 minutes.
6.Add in the broccoli florets and baby carrots and stir to combine. Pour in the prepared sauce and toss everything together to coat.
7.Drizzle with the remaining tablespoon of peanut oil and cook, stirring, until everything is heated through and the broccoli is crisp-tender, about 3-4 minutes.
