6 cups water
1 stalk fennel , chopped
4 -6 ounces chorizo sausage , casing removed , chopped

1/2 cup crumbled queso fresco or 1/2 cup cheddar cheese
1/3 cup oil , to garnish ( optional )
4 -6 corn tortillas , cut in strips , to garnish ( optional )

Instructions

1.Rinse and pick over the black beans, then soak them in 6 cups of water overnight.
2.Take a large pot and add fennel, chorizo sausage, onion, salt, pepper, and chipotle chiles in adobo with soaked beans.
3.Cover the pot and let it simmer for about an hour. After an hour, add peeled shrimp and cook for 5-7 minutes or until well cooked.
4.Turn off the heat, then add crumbled queso fresco or cheddar cheese. Allow the cheese to melt.
5.Fry corn tortillas cut in strips in ⅓ cup of oil and set aside for garnish. Serve hot with tortilla strips on top.
