Ingredients

extra virgin olive oil
1/2 cup minced onion
5 garlic cloves , peeled and chopped
2 cups cooked and cooled chickpeas , liquid reserved
1 cup roasted almonds , chopped fine
1 tablespoon cilantro
1 teaspoon parsley
1/2 teaspoon turmeric
1/2 teaspoon chili powder
1/2 teaspoon cinnamon
1/2 teaspoon ground cumin
1/2 cup crumbled saltine crackers
3 eggs ( recommended ) ( optional )
olive oil , as needed
Falafel is a popular Middle Eastern dish made from chickpeas or fava beans, blended with herbs and spices and fried or baked until crispy. Falafel tenders are a variation where instead of balls, the mixture is formed into tenders or patties with added nuts (almonds) for extra crunch. Instructions

1.In a pan, heat the extra virgin olive oil. Add onions and cook for 5 minutes until they turn translucent. Add garlic and cook for another minute.
2.In a food processor, combine the chickpeas, almonds, cilantro, parsley, turmeric, chili powder, cinnamon, and cumin. Blend until mixture forms a coarse paste.
3.Transfer the mixture to a bowl. Add saltine cracker crumbs and 3 tablespoons of the reserved liquid from the chickpeas. Mix well until the mixture comes together.
4.Form the mixture into 12-14 falafel tenders.
5.In a separate pan, heat olive oil as needed. Cook the falafel tenders in batches for 2-3 minutes each side until golden brown.
6.Serve immediately with your favorite dip or sauce.
