Ingredients

1 small onion
4 garlic cloves
2 small oranges
50 g unsalted butter
1 cinnamon stick
225 g long-grain white rice
2 bay leaves
75 g sultanas
1/2 teaspoon turmeric
600 ml chicken stock or 600 ml vegetable stock
1 teaspoon sunflower oil
50 g pistachios , shelled
3 sprigs fresh coriander , to garnish
Egyptian-Style Rice is a versatile dish that is perfect as a side, or can even be eaten as a main course. The dish is packed with flavors and aromas, thanks to the combination of cinnamon, orange zest, and sultanas. The saucepan-cooked long-grain white rice is garnished with shelled pistachios and fresh coriander sprigs, which add crunch and freshness to the dish. Instructions

1.Peel and dice the onion and garlic.
2.Grate the orange zest and squeeze the juice.
3.Melt the butter in a large saucepan.
4.Add the onion, garlic, and cinnamon stick and fry for 2-3 minutes until softened.
5.Add the rice, bay leaves, sultanas, turmeric, and orange zest.
6.Cook for 1-2 minutes until the rice is coated in the butter.
7.Pour in the stock and orange juice, and bring to the boil.
8.Reduce the heat and simmer for 15-20 minutes, stirring occasionally.
9.Meanwhile, heat the sunflower oil in a frying pan.
10.Add the pistachios and fry for 2-3 minutes until golden brown.
11.Garnish the rice with the pistachios and coriander sprigs before serving.
