Ingredients

250 g flour ( all purpose )
1 pinch salt
1 egg ( whole )
100 ml water ( lukewarm )
20 ml oil ( canola )
vinegar
750 g apples ( rather sour , such as Granny Smith , already peeled , pitted and cut in about 1 - 1,5cm long , thin slic )
lemon juice ( juice of half a lemon )
1 teaspoon lemon , cest
50 g breadcrumbs
50 g hazelnuts ( ground )
50 g butter
120 g brown sugar ( or to taste )
1 teaspoon cinnamon
50 g raisins ( optional )
2 -3 tablespoons rum ( or calvados ) ( optional )
butter ( melted , for coating )
icing sugar ( for dusting )

It consists of a thin layer of crispy pastry wrapped around a sweet apple filling with added hazelnuts for crunch. The filling is often spiced with cinnamon and lemon for a bright, tangy flavor. It's perfect as a sweet treat after a hearty meal or as a warm and comforting snack on a cold day.

Instructions

1.In a large mixing bowl, combine the flour and salt. Make a well in the center and add the egg, water, oil, and a splash of vinegar.
2.Mix to form a dough, then knead for 10 minutes until smooth and elastic. Cover with a damp towel and let rest for 20 minutes.
3.In a separate bowl, mix the sliced apples, lemon juice, lemon zest, breadcrumbs, hazelnuts, brown sugar, cinnamon, and optional raisins and rum.
4.Preheat the oven to 180°C. On a floured surface, roll the dough into a large rectangle about 30 x 40cm. Brush with melted butter.
5.Spread the apple filling over the dough, leaving a small border around the edges. Roll the dough tightly, tucking in the ends. Place on a baking sheet and brush with more melted butter.
6.Bake for 40-50 minutes until golden brown and crispy. Dust with icing sugar before serving.
