2 medium potatoes , cubed and par boiled
2 teaspoons table salt
225 g tomatoes , chopped roughly
150 ml water
150 ml natural yoghurt
mixed grain rice , to serve
toasted sliced almonds , to garnish
crushed peanuts , to garnish

Instructions

1.Heat the vegetable oil in a large pan over medium heat.
2.Add the ground coriander, ground cumin, chili powder, and ground turmeric to the pan. Stir the spices for a few seconds until fragrant.

4.Add the mixed vegetables to the pan and stir to coat with the spices and garlic. Cook for 2-3 minutes.
5.Add the par boiled cubed potatoes to the pan and season with the table salt. Stir to combine with the vegetables and spices.
6.Add the chopped tomatoes and water to the pan and stir. Bring the mixture to a boil, then cover and simmer for 10-15 minutes until the vegetables are tender.
7.Finally, stir in the natural yoghurt and heat through. Serve the curry with mixed grain rice and garnish with toasted sliced almonds and crushed peanuts.
