125 g plain flour ( wholemeal - 3/4 cup )
90 g rolled oats
25 g oat bran
1 1/2 tablespoons wheat germ
1 1/2 tablespoons skim milk powder
3/4 tablespoon baking powder
50 g eggs
2 tablespoons skim milk
110 g sugar
80 ml light olive oil
1/2 teaspoon vanilla essence
40 g milk chocolate chips
2 tablespoons walnut pieces ( chopped )
1 1/2 tablespoons shredded coconut ( optional )
These Nutty and Oaty Choc-Chip Biscuits are a healthy and satisfying treat that are perfect for snacking throughout the day. They are loaded with oats, which pack a punch of fiber, and are mixed with nutty walnuts and sweet coconut. Chocolate chips are added for extra indulgence and flavor. And using wholemeal flour instead of refined flour, together with the combination of olive oil instead of butter makes them a healthier alternative to regular biscuits. Instructions

1.Preheat oven to 180 C (350 F) and line baking sheets with parchment paper.
2.In a large mixing bowl, whisk together the flour, oats, oat bran, wheat germ, skim milk powder and baking powder.
3.In another bowl, whisk together eggs, skim milk, sugar, light olive oil and vanilla essence until well incorporated.
4.Add wet mixture to dry mixture and stir to combine.
5.Fold in chocolate chips, walnut pieces and shredded coconut (if using).
6.Using a tablespoon, drop spoonfuls onto the baking sheets, leaving some space between cookies.
7.Bake 10-12 minutes or until golden brown.
8.Transfer to a wire rack to cool completely.
