1 can refried beans
2 large eggs
2 corn tortillas
6 jalapenos
1 medium onion
8 tomatillos

Instructions

1.Boil the tomatillos for 5 minutes. Remove from heat and set aside.
2.In a small saucepan, heat oil over medium-high heat. Cook onion until translucent, then add garlic and jalapenos. Cook for 2-3 minutes.
3.Transfer the onion mixture to a blender with the tomatillos and blend until smooth.

5.Heat up the refried beans in a saucepan with a dash of water. Cook until hot.
6.Warm the tortillas in a separate frying pan over medium heat. Remove from heat and set aside.
7.In another frying pan, heat a dash of oil over medium-high heat. Fry the eggs on both sides until cooked to your liking.
8.To plate, smear the refried beans on the tortillas. Top each with one fried egg. Spoon the green sauce over one egg and the red sauce over the other. Garnish with cilantro.
9.Serve hot and enjoy!
