2 lbs tri-tip steak , cut into large chunks
1 cup water
1/4 cup anejo tequila
1 garlic clove , minced
1 serrano chili , diced
kosher salt & freshly ground black pepper
5 cans green tomatillo sauce
1 1/2 cups tomato sauce
1 lb monterey jack pepper cheese , grated
3 cans black beans
1 can diced chilies
2 dozen flour tortillas

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large pot over medium-high heat, add the tri-tip steak, water, anejo tequila, garlic, serrano chili, kosher salt, and freshly ground black pepper.
3.Bring the mixture to a boil, then reduce the heat, cover, and simmer for 1 1/2 to 2 hours, or until the meat is very tender.
4.Remove the meat from the pot and shred it, discarding any gristle or fat.
5.In a separate pot, mix together the green tomatillo sauce and tomato sauce, and heat it on medium.
6.In a large bowl, mix together the shredded beef, 1 pound of the grated monterey jack pepper cheese, black beans, and diced chilies.
7.To assemble the enchiladas, ladle some of the sauce onto the bottom of a large baking dish. Fill each tortilla with the beef and cheese mixture, and roll it up tightly. Place the enchiladas seam-side down into the baking dish, and cover them with the remaining sauce.
8.Sprinkle the remaining cheese on top of the enchiladas.
9.Bake the enchiladas for 25 to 30 minutes or until the cheese is melted and bubbly.
