Shoofly Pie is a traditional dessert hailing from the Pennsylvania Dutch region of the United States. It derives its name from the fact that its sweet, sticky filling attracted flies, which had to be shooed away. The pie is typically made with pantry ingredients such as flour, sugar, shortening, corn syrup, and molasses. The filling is poured into an unbaked pie crust and topped with a sweet crumbly mixture of flour, sugar, and shortening. When baked in the oven, the filling sets into a soft, custardy texture that is rich, spicy, and satisfying.

Instructions

.Preheat the oven to 375°F.
.In a large mixing bowl, combine the flour and brown sugar.
.Add the chilled shortening, and use a pastry blender or fork to cut the shortening into the flour mixture until it resembles coarse crumbs.
.Reserve 1/2 cup of this mixture for later.
.In a small bowl, dissolve the baking soda in the boiling water.
.Add the corn syrup and molasses to the baking soda mixture, stirring until well combined.
.Gradually pour the mixture into the flour mixture, stirring until smooth.
.Pour the filling into the pie crust.
.Sprinkle the reserved flour mixture over the top of the filling.
.Bake for 30 minutes.
.Reduce the oven temperature to 350°F and continue baking for another 25 to 30 minutes, or until the filling is set and the crust is golden brown.
.Remove from the oven and let cool completely before serving.
