Instructions

1.Preheat the oven to 350°F (180°C) and prepare a baking sheet with parchment paper.
2.In a mixing bowl, soak 1/4 cup of raisins in water for 5 minutes, then finely chop the red onion and set aside half of it. Once the raisins have soaked, drain off any excess water and add the onion, couscous, salt, ras el hanout, and cinnamon to the bowl. Stir until everything is well mixed.
3.Add the ground meat and lightly beaten egg to the bowl, and use your hands to mix everything together until well-combined.
4.On the prepared baking sheet, form the meat mixture into a rectangular loaf shape.
5.In a small bowl, mix together the grape tomatoes, remaining onion, and remaining raisins. Spoon this mixture onto the top of the meatloaf.
6.Sprinkle the top of the meatloaf with cinnamon and lightly press everything down into the mixture.
7.Bake the meatloaf in the preheated oven for 50 to 60 minutes, or until cooked through and the internal temperature reaches 160°F (71°C).
8.Let the meatloaf cool for at least 10 minutes before slicing and serving.
