Ingredients

1 1/2 cups hot mashed potatoes , leftover work great
1/2 cup butter or 1/2 cup shortening
3 eggs
2 cups sugar
1 cup buttermilk
1 teaspoon vanilla extract
5 1/2 cups flour
4 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon fresh grated nutmeg
vegetable oil ( for frying )

Instructions

1.In a large mixing bowl, cream the butter, sugar, and eggs together until light and fluffy.
2.Add the mashed potatoes, buttermilk, and vanilla extract. Combine well.
3.In another bowl, sift together the flour, baking powder, baking soda, salt, and nutmeg.
4.Add the dry ingredients in three parts, stirring until a soft dough forms.
5.Cover the dough and let it rest for 20 minutes.
6.On a floured surface, roll out the dough to 1/2 inch thickness. Use a doughnut cutter or two sized biscuit cutters (one large, one small) to cut out the doughnuts and the doughnut holes. Re-roll the scraps of dough and repeat.
7.In a deep frying pan, heat the vegetable oil to 375F. Fry the doughnuts and doughnut holes until golden brown, about 2-3 minutes per side. Drain on a paper towel-lined plate.
8.Serve warm and dusted with powdered sugar.
