Ingredients

1/2 cup brown sugar

1 cup buttermilk , or
3/4 cup whole milk
3/4 cup applesauce
1/3 cup butter or 1/3 cup margarine , melted
3/4 cup cranberries ( whole , canned )

Instructions

1.Preheat oven to 400°F (200°C).
2.In a large mixing bowl, combine brown sugar, whole wheat flour, oatmeal, cinnamon, nutmeg, baking soda, baking powder, and walnuts until well mixed.
3.In a separate bowl, beat the eggs and add buttermilk or whole milk, applesauce and melted butter or margarine.

6.Grease muffin tin and fill ¾ full with the muffin batter.
7.Bake muffins for 20-25 minutes until the surface is golden brown and a toothpick inserted in the center of one comes out clean.
8.Take out of the oven and let the muffin tin sit for 5 minutes before carefully transferring the muffins to a wire rack to cool.
