4 sheets gelatin

Instructions

1.Grease a 900ml pudding basin.
2.Put the ground almonds, sugar and almond extract into a large bowl and mix together well.
3.Add the extra thick double cream and milk to a pan and heat until just hot.
4.Add the gelatin to the pan and whisk until it has dissolved.
5.Pour the milk mixture over the almond mixture and whisk thoroughly.
6.Pour the mixture into the pudding basin and chill for at least 4 hours or until set.
7.To make the blueberry sauce, put the blueberries, sugar and water into a pan and heat until just boiling.
8.Mix the cornflour with 1 tablespoon of cold water and add to the pan.
9.Stir until the mixture thickens, then remove from the heat and stir in the amaretto.
10.Pour the sauce into a jug and leave to cool.
11.To serve, turn the pudding out onto a plate and spoon over the blueberry sauce. Scatter over the toasted almonds to finish.
