2/3 pound skinless , boneless chicken breast , cut into cubes
2 tablespoons vegetable oil
2 cups water
1/2 cup roasted peanuts
1 piece fresh ginger , peeled and julienned
2 tablespoons tamarind juice
2 tablespoons roasted peanuts

Instructions

1.Heat a wok or skillet over medium heat.

11.Add the roasted peanuts and ginger and simmer for an additional 5 minutes.
12.Stir in the tamarind juice and palm sugar until well combined.
13.Remove from heat and serve hot with rice.
