Ingredients

750 g pumpkin ( Hokkaido or Butternut , deseeded )
200 g potatoes ( cooked and mashed )
100 g flour
2 eggs
100 g parmesan cheese ( grated and split in two portions )
3 -4 tablespoons butter
2 tablespoons sage ( roughly chopped )
salt and pepper

Instructions

1.Preheat the oven to 180°C/160°C fan/gas mark 4 and roast the pumpkin for 25-30 minutes until tender. Remove from the oven and allow to cool.
2.Mash the pumpkin and potatoes together with a potato masher or fork.
3.Add egg, flour and half the grated parmesan cheese and mix until smooth.
4.Divide the dough into 3-4 portions and roll each portion into thin logs.
5.Cut the logs into small pieces and press each piece gently with a fork to create ridges.
6.Boil a large pot of water and add salt. Drop in the gnocchi and cook for 2-3 minutes until they float to the surface.
7.Drain the gnocchi and keep warm. In a separate pan, heat butter until melted and add sage leaves. When the butter turns golden brown, remove from heat.
8.Pour the sage butter over the warm gnocchi and sprinkle the remaining parmesan cheese on top.
9.Serve and enjoy!
