1 beef chuck in 1 piece

1 lamb shank ( optional )

Instructions

1.Heat 1/4 cup olive oil in a large pot or Dutch oven over medium heat.
2.Add pork neck bones, pork rib, beef chuck, beef rib, and lamb shank (if using) into the pot.
3.Brown the meat on all sides for about 10 minutes, then remove from the pot and set aside.
4.In the same pot, add another 1/4 cup olive oil and heat over medium heat.
5.Stir in the dried basil, dried mint, and red pepper flakes and sauté for 1-2 minutes.
6.Add onion and garlic and cook until onion is translucent, about 5 minutes.
7.Stir in tomato paste and crushed tomatoes and cook for 1-2 minutes until the tomato paste is well incorporated.
8.Add 7 cups of water, dried basil, dried mint, and crushed red pepper flakes.
9.Season with salt and black pepper, and stir well.
10.Return the meat to the pot and bring the mixture to a boil.
11.Reduce the heat to low and simmer for 2-3 hours, stirring occasionally.
12.While the sauce simmers, prepare the meatballs by mixing together the ground beef, ground pork, eggs, milk, Italian bread crumbs, Parmesan cheese, garlic, and olive oil in a large bowl.
13.Shape the mixture into meatballs about 2 inches in diameter.
14.Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
15.Add the meatballs and cook, turning occasionally, until browned on all sides, about 10 minutes per batch.
16.Add the meatballs and Italian sausage to the pot with the sauce and let it simmer for another hour before serving.
