Ingredients

110 g honey
75 g unsalted butter
1 1/4 kg apples , peeled , quartered , cored and sliced
75 g raisins
150 g brioche bread
150 g light muscovado sugar
3 drops vanilla extract
150 g ground almonds
150 g unsalted butter ( cold and diced )
315 g creme fraiche
2 tablespoons calvados
75 g icing sugar , sifted
Normandy Apple and Honey Brioche Pudding is a classic French dessert that's perfect for winter. This warming, comforting pudding is made with layers of buttery brioche, sweet apples cooked in honey, and plump raisins. Each layer is sprinkled with muscovado sugar and vanilla extract before being topped with ground almonds and butter. The result is an indulgent, golden-brown dessert that's perfect for sharing with family and friends. Serve it with a dollop of Calvados cream for an added touch of luxury.

Instructions

1.Preheat the oven to 180°C.
2.In a pan, heat the honey and unsalted butter together until the butter has melted.
3.Add in the apples and cook them for 5 minutes, stirring occasionally.
4.Remove the pan from the heat and add the raisins.
5.Cut the brioche into 1 cm-thick slices and butter each side, then arrange a layer of the bread on the bottom of a 2-litre ovenproof dish.
6.Spoon half of the apple mixture over the bread, followed by a sprinkling of muscovado sugar and a few drops of vanilla extract.
7.Cover the apples with another layer of brioche slices and repeat the apple mixture and sugar layers.
8.Scatter the ground almonds over the top and dot with the diced butter.
9.Bake in the preheated oven for 50-60 minutes, or until the pudding is golden-brown on top and the apples are soft.
10.Meanwhile, mix the creme fraiche, calvados, and icing sugar together until smooth.
11.Serve the warm pudding with the Calvados cream.
