Ingredients

2 tablespoons soy sauce
1 inch piece ginger , peeled and roughly chopped
6 garlic cloves , smashed
1/2 cup chopped cilantro leaves and stems
2 stalks lemongrass , bruised or 8 lemongrass , leaves roughly chopped

3 -4 boneless skinless chicken breast halves ( about 1 pound )
1/4 cup freshly squeezed lime juice ( from 2 limes )
2 tablespoons rice vinegar
1 tablespoon fish sauce
1 tablespoon brown sugar
1/4 cup peanut butter
6 ounces thin rice noodles
2 carrots , coarsely shredded
1/3 cup chopped cilantro
1/4 cup chopped mint
1/4 cup sliced scallion
1/2 cup fresh bean sprout
1/4 cup chopped peanuts

Instructions

1.In a large pot, bring 2 quarts of water to a boil with soy sauce, ginger, garlic, cilantro, lemongrass, and a pinch of salt and pepper
2.Add chicken breasts and reduce the heat to low simmer, partially covered until the chicken is cooked about 20 minutes.
3.Remove the chicken from the pot and let it cool. Then, using your hands or a fork, shred the chicken into bite-size pieces.
4.In a blender, combine lime juice, rice vinegar, fish sauce, brown sugar, peanut butter, and 1/4 cup of water. Blend until smooth.
5.Cook the rice noodles according to the package instructions and rinse them under cold water. Pat dry them with a paper towel.
6.In a serving bowl, combine the noodles, chicken, carrot, cilantro, mint, scallion, and bean sprouts and toss with the dressing. Season with salt and pepper to taste.
7.Garnish with peanuts, serve immediately or cover and refrigerate up to one day.
