Ingredients

Chicken :
2 quarts water
1 whole chicken
1 head garlic
1 cup chopped fresh ginger root
1 teaspoon salt
1 tablespoon sugar
Rice :
1 tablespoon coconut oil
1 tablespoon chopped garlic
1 tablespoon chopped shallots
4 pieces ginger , coarsely chopped
2 cups uncooked jasmine rice
2 cups chicken broth
3 pandan leaves ( optional )
Sauce :
1/3 cup peeled , roughly chopped ginger
4 red Thai chile peppers
1/2 cup fermented soybeans
1 head pickled garlic
1/3 cup white vinegar
1/3 cup thin soy sauce
Garnish :
fresh cilantro ( optional )
cucumber slices ( optional )
Khao Man Gai, also known as Hainanese chicken rice, is a popular dish in Thai cuisine that originated from the Chinese Hainanese chicken rice. Instructions

1.Rinse chicken off and set aside.
2.Fill a large pot with water and bring to a boil over high heat.
3.Place chicken, garlic, ginger, salt, sugar, and simmer for 30-40 minutes of low heat until chicken is fully cooked.
4.In another pot, warm coconut oil then saute garlic, shallots, ginger until they are fragrant.
5.Add uncooked rice and stir until it's dry.
6.Transfer rice mixture to a rice cooker, add chicken broth and pandan leaves, then cook it up.
7.In a blender or food processor, blend ginger, Thai red peppers, fermented soybeans, pickled garlic, white vinegar, and soy sauce until they become a smooth sauce.
8.Remove chicken and bone it.
9.Serve rice, chicken, and sauce separately.
10.Garnish with cilantro or cucumber slices if desired.
