1 package dry active yeast
1 cup soymilk
2 1/2 tablespoons sugar
1/2 teaspoon salt
3 cups flour
1 egg
1 -2 tablespoon vegetable oil
4 tablespoons margarine
6 tablespoons granulated sugar
4 tablespoons brown sugar
3 tablespoons cinnamon
2 cups powdered sugar
1/4 cup soymilk
2 tablespoons melted margarine
2 teaspoons vanilla
1/2 teaspoon almond extract

Instructions

1.Heat 1 cup of soymilk until very warm and pour it in a mixing bowl. Add 2-1/2 tablespoons sugar, 1/2 teaspoon salt and a package of dry active yeast in it to activate the yeast.
2.Add three cups of flour and mix it until it comes together. Add 1 egg and 1-2 tablespoons of vegetable oil. Mix it until dough becomes sticky. Remove dough from mixing bowl. Grease a baking sheet and place the dough on it. Shape the dough into a smooth ball, place it in a warm area (cover it) and let it rise for an hour.
3.Preheat oven to 180 Degree Celsius. Now, roll the dough into a rectangle; the dough should be around 1 cm thickness. Melt 4 tablespoons of margarine. Mix 4 tablespoons of granulated sugar, 4 tablespoons of brown sugar, and 3 tablespoons of cinnamon and sprinkle it over the rectangle. Now brush the melted margarine over the mixture.
4.Roll the dough starting from one of the long sides. Cut 2-inch pieces and place them on a baking sheet lined with baking paper. Let it rest for 30 minutes. Bake the cinnamon rolls for 18-22 minutes.
5.Make frosting by mixing 2 cups powdered sugar, 1/4 cup soymilk, 2 tablespoons of melted margarine, 2 teaspoons vanilla, and 1/2 teaspoon of almond extract.
6.Drizzle frosting over the cinnamon rolls and enjoy it warm.
