4 teaspoons cornstarch , divided
5 teaspoons soy sauce , divided
1 teaspoon fresh ginger , peeled and minced
1 teaspoon dark soy sauce
1 teaspoon shaoxing wine or 1 teaspoon dry sherry
1/8 teaspoon pepper
2 garlic cloves , minced
1 lb chicken breast , skinless , boneless and cut into 2 x 1/2 inch-thick pieces
1/2 cup chicken broth
1 tablespoon brown sugar
3 tablespoons ketchup
2 1/2 tablespoons rice vinegar
2 teaspoons chili paste
1 teaspoon dark sesame oil
1 tablespoon vegetable oil , divided
1 cup onion , diced in 1/2 inch sections
1 cup green bell pepper , diced in 1/2 inch sections
1 cup medium red bell pepper , diced in 1/2 inch sections
1/2 cup green onion , sliced in 1 inch sections
1 cup fresh pineapple , diced in 1/2 inch sections

Instructions

1.In a small bowl, stir together 2 teaspoons of cornstarch, 2 teaspoons of soy sauce, ginger, dark soy sauce, wine, and pepper.
2.Add in chicken pieces and toss to coat well with the marinade mixture. Set aside to marinate for 15 minutes.
3.In another bowl, whisk together remaining 2 teaspoons of cornstarch and 3 teaspoons of soy sauce.
4.Add in broth, brown sugar, ketchup, rice vinegar, and chili paste, whisking until well combined.
5.In a non-stick wok or a large skillet, heat vegetable oil over medium-high heat. Add chicken pieces in a single layer and cook for 1-2 minutes until browned.
6.Flip over and cook for another 1-2 minutes until browned.
7.Remove chicken from pan and set aside.
8.Add remaining 1 teaspoon of oil to the pan.
9.Add onion, green and red bell peppers, and stir-fry for 2-3 minutes until crisp-tender.
10.Add in pineapple chunks and chicken broth mixture.
11.Cook and stir for 2-3 minutes until the sauce thickens and vegetables are coated.
12.Add in sesame oil, green onions and chicken.
13.Stir-fry for another 1-2 minutes until heated through.
14.Serve hot with steamed rice.
