Ingredients

1 beef tenderloin , sliced into 1/2-inch thick strips
sea salt , to taste
fresh ground white pepper , to taste
2 tablespoons cornstarch
2 tablespoons ketchup
2 tablespoons shaoxing rice wine or 2 tablespoons dry sherry
2 tablespoons light soy sauce
2 tablespoons black vinegar or 2 tablespoons balsamic vinegar
2 teaspoons guilin chili sauce ( Lee Kum Kee brand )
1 1/2 tablespoons szechuan peppercorns
2 tablespoons peanut oil
5 whole dried Thai chiles
2 small red fresno bell peppers or 1 serrano chili , bruised and cut into 1 1/2-inch pieces
1/2 cup dry roasted peanuts
1/4 cup fresh cilantro , chopped
2 scallions , cut into 2 inch pieces

Instructions

1.Season the beef strips with salt and white pepper, then coat them with cornstarch.
2.In a small bowl, mix ketchup, shaoxing rice wine, light soy sauce, black vinegar and guilin chili sauce.
3.Heat peanut oil in a wok, and stir-fry beef strips over high heat until browned and crispy. Set aside.
4.Add Szechuan peppercorns and dried Thai chiles to the oil, stir-fry until aromatic.
5.Add red peppers to the wok and stir-fry for another 2 minutes.
6.Remove peppercorns and dried chilies from the wok, then add the sauce mixture to the wok and cook over high heat.
7.Add the beef, peanuts and cilantro to the wok and toss until the sauce is thickened and coats the ingredients.
8.Garnish with scallions, then serve with steamed rice.
