Ingredients

2 large egg whites
6 tablespoons cornstarch
6 tablespoons Chinese wine ( Shaoxing Wine ) or 6 tablespoons dry sherry ( Shaoxing Wine )
6 tablespoons soy sauce
1 lb chicken thigh , skinless
1/2 cup chicken stock
4 teaspoons white vinegar
4 teaspoons sugar
vegetable oil , for frying
6 red chili peppers , dehydrated
2 tablespoons garlic , minced
2 tablespoons ginger , minced
1/2 teaspoon red pepper flakes
1/2 cup green onion , sliced
green onion , sliced on the bias , garnish
hot steamed white rice ( accompaniment )

Instructions

1.In a bowl, beat the egg whites until frothy. Add 4 tablespoons of the cornstarch, 2 tablespoons of the wine, and 2 tablespoons of the soy sauce, whisk until smooth. Add the chicken, toss to coat, and let stand for 10 minutes.
2.In a small bowl, mix the chicken stock, vinegar, sugar, and the remaining 4 tablespoons of wine and 4 tablespoons of soy sauce.
3.In a large skillet, heat 1/2 inch of oil until shimmering. Add half of the chicken and fry over high heat, turning once, until golden and crispy, about 4 minutes. Drain the chicken on paper towels. Repeat with the remaining chicken.
4.In another skillet, heat 1 tablespoon of oil until almost smoking. Add the chili peppers, garlic, and ginger and stir-fry over high heat until fragrant, about 30 seconds. Stir the sauce, add it to the skillet, and cook until thickened, about 1 minute.
5.Add the chicken and toss to coat. Add the green onions and red pepper flakes and toss again. Serve hot with steamed rice.
