Instructions

1.In a large saucepan, add the dried apricots, 1 1/2 cups orange juice, and enough water to cover the apricots.
2.Bring the mixture to a boil and then simmer for about 20 minutes or until the apricots are soft and the liquid has reduced.
3.Use an immersion blender or regular blender to puree the apricot mixture until smooth.
4.Return the puree to the saucepan and add the remaining 1/2 cup orange juice and lemon juice.
5.Stir in the no sugar needed fruit pectin and bring the mixture to a boil.
6.Allow the mixture to boil for 1 minute, then remove from heat and stir in the sugar substitute.
7.Skim any foam off of the top, then allow the mixture to cool.
8.Pour the apricot satin into sterile jars and refrigerate until ready to use.
