Ingredients

1 cup polenta ( not instant - Goya corn meal is really good with this receipe - or you can use imported polenta )
5 cups water or 5 cups broth
salt
1 tablespoon butter
Polenta is a classic Italian dish traditionally made by simmering cornmeal with water or milk on a stove top and stirring constantly until it becomes creamy and smooth. This recipe, however, eliminates the need for constant attention by baking it in the oven and still retaining the creamy texture. It's an excellent comfort food that also makes a great base for a variety of toppings such as roasted vegetables, grilled meats or sautéed mushrooms. No-Stir Oven Polenta is perfect for those cozy winter nights or as a quick and easy fix for a large gathering.

Instructions

1.Preheat your oven to 350 degrees F.
2.In a large oven-safe pot or casserole dish, whisk together the polenta, water/broth, and salt.
3.Bake in the oven for 45 minutes, then remove and stir in the butter until melted.
4.Serve hot.

PROS

No need to stand at the stove stirring for hours, this No-Stir Oven Polenta is a great time saver and still yields a delicious and creamy result.

It’s versatile and can be served as a side dish or topped with your favorite protein for a main course.

CONS

This recipe takes longer to cook than traditional stovetop polenta, but the trade-off is the no-stirring required.

It’s not gluten-free or vegan unless you use appropriate substitutes for the broth and butter.

HEALTH & BENEFITS

Polenta is naturally gluten-free and is a good source of complex carbohydrates and dietary fiber. It’s also rich in antioxidants and vitamins, including vitamin A, which supports healthy vision, and vitamin B6, which is essential for healthy brain function. Using water instead of broth and reducing the amount of butter can decrease calorie and fat content.
