Instructions

1.Preheat oven to 375°F.
2.Thaw and drain spinach
3.Cook onions and mushrooms over medium heat until onions are translucent, then add spinach and cook for 2 minutes until the mixture is dry.
4.In a mixing bowl, combine the feta cheese, egg substitute, black pepper, nutmeg, and parsley. Then add the spinach mixture, and stir until properly combined.
5.Pour the mixture into an 8" square baking dish and sprinkle with parmesan cheese.
6.Bake for 45-50 minutes, or until the center of the spanikopita is firm.
