1/4 large yellow onion , thinly sliced
2 cloves garlic , thinly sliced

1/3 cup chopped fresh parsley
3 tablespoons balsamic vinegar
1/2 cup grated Romano cheese

Instructions

1.Cook penne pasta according to package directions, drain and set aside.
2.Preheat the oven to 425°F.
3.In a large bowl, toss together yellow squash, zucchini, carrot, red bell pepper, grape tomatoes, green beans and asparagus with 2 tablespoons olive oil, Italian seasoning, lemon juice, salt and pepper until vegetables are well coated.
4.Spread vegetables on a large baking sheet and roast for 20 minutes or until they are tender and a little browned.
5.In a large saucepan, heat the remaining 2 tablespoons of olive oil over medium heat.
6.Add butter to the pan when hot, and once melted add onion and garlic, cooking for 1-2 minutes until softened.
7.Add lemon zest and cook for another minute.
8.Stir in roasted vegetables, chopped basil, chopped parsley and balsamic vinegar.
9.Add cooked pasta to the pan and toss everything together well, until the pasta is well-coated with the sauce.
10.Sprinkle grated Romano cheese on top of the pasta and serve immediately.
