4 egg yolks

Instructions

1.Preheat your oven to 160°C (325°F).
2.In a medium sized bowl, whisk together the egg yolks and granulated sugar until well combined.

4.Gradually pour the hot cream into the egg mixture, whisking constantly until well combined.
5.Pour the mixture evenly into 4 ramekins or heat-resistant, sealed glasses.
6.Place the ramekins/glasses into a baking dish and fill the dish with hot water until the water reaches halfway up the sides of the ramekins/glasses.
7.Carefully put the baking dish into the oven and bake for 30-35 minutes or until the custard is just set.
8.Once finished, remove the ramekins/glasses from the baking dish and allow them to cool to room temperature. Then, put the ramekins in the refrigerator for at least 2 hours or overnight to set.
9.When ready to serve, sprinkle dark brown sugar over the top of each custard.
10.Using a kitchen torch, melt the sugar until it is caramelized.
