1 can hominy , drained
1 1/2 cups masa de harina for tortillas
1/4 teaspoon salt
1 cup hot water
Nixtamal Tortillas are an authentic Mexican food that has been a staple for centuries. The traditional method of making Nixtamal tortillas involves soaking corn kernels in an alkaline solution overnight, which helps loosen the hull and make the kernel more digestible. This process is followed by washing the kernels and grinding them to produce masa. In this recipe, we use canned hominy to shorten the process. The resulting tortillas are flavorful, soft, and fragrant with a slightly chewy texture that cannot be achieved with regular tortillas. These tortillas are so versatile and can be served as breakfast tacos, with stews or curries, or topped with salsa and cheese for a tasty snack.

Instructions

1.Rinse the canned hominy well and place it in a blender with the hot water
2.Blend on high for about two minutes until the mixture is uniform and has a smooth consistency
3.In a mixing bowl, combine the masa de harina and salt
4.Add the hominy mixture gradually to the dry ingredients, mixing with your hands until the dough is smooth and not sticky
5.Preheat a griddle over medium-high heat
6.Divide the dough into sixteen balls, and press each ball with your palm into 1/4” thick disks
7.Gently place the flattened disks onto the griddle and cook for about 1 minute until golden brown
8.Flip the tortillas over with a spatula and continue cooking for another minute
9.Serve hot with your favorite Mexican dish
