Ingredients

1 lb unsalted butter
1/2 onion , chopped
2 -3 garlic cloves , crushed
1 inch gingerroot , cut into 1/4-inch slices
3 -4 cardamom pods
1 cinnamon stick
3 -4 whole cloves
1 teaspoon fenugreek seeds
1/2 teaspoon turmeric
Niter Kibbeh is a spiced clarified butter originating in Ethiopia. It is often used in Ethiopian cuisine to flavor stews, soups and sautéed vegetables. The process of clarifying the butter removes the milk solids and water, leaving behind pure butterfat that is more stable at high temperatures and has a longer shelf life. The addition of the spices and aromatics infuses the clarified butter with a rich and complex flavor that complements many dishes. Instructions

1.In a heavy-bottomed saucepan, melt the butter over medium heat.
2.Once melted, add the onion, garlic, ginger, cardamom pods, cinnamon stick, cloves, fenugreek seeds and turmeric.
3.Reduce the heat to low and let the mixture simmer for about 45 minutes, stirring occasionally.
4.As the mixture simmers, it will clarify and become more fragrant.
5.After 45 minutes, remove from heat and let it cool for a few minutes.
6.Strain the mixture through a fine mesh sieve, discarding the solids.
7.Transfer the clarified butter to a clean jar or container and store in the refrigerator until ready to use.
