Ingredients

2 lbs unsalted butter ( butter only )
1 small onion , coarsely chopped
4 garlic cloves , minced
1 tablespoon grated fresh ginger
1 teaspoon turmeric
1/2 teaspoon cardamom seed , crushed
1 cinnamon stick
2 whole cloves
1/8 teaspoon ground nutmeg
1/4 teaspoon ground fenugreek
1 tablespoon fresh basil
Niter Kebbeh is a spiced ghee that is a staple in Ethiopian cooking. Ghee is clarified butter that has been simmered to remove the water content and milk solids, resulting in a rich and flavorful cooking oil. Niter Kebbeh takes it one step further by adding aromatic spices such as ginger, cinnamon, cloves, and fenugreek to the mix. It is often used as a base for stews, soups, and sauces, but can also be used in place of regular butter or oil for sautéing and frying.

Instructions

1.In a medium saucepan, melt the butter over low heat.
2.Add the onion, garlic, ginger, turmeric, cardamom, cinnamon, cloves, nutmeg, and fenugreek to the pan and stir to combine.
3.Simmer the mixture for 1 hour over low heat, stirring occasionally.
4.After 1 hour, add the basil to the pan and stir to combine.
5.Allow the mixture to cool slightly before pouring through a fine-mesh strainer into a heatproof container.
6.Discard the solids left in the strainer and refrigerate the spiced ghee until ready to use.
