Ingredients

250 g potatoes
4 tablespoons cashews , soaked in
1/4 cup water
1/4 cup yogurt
1/2 tablespoon chopped ginger
1 teaspoon chopped garlic
1/2 teaspoon black cumin ( shah jeera )
1 bay leaf ( tej patta )
1 cup onion , chopped finely
1/4 teaspoon turmeric ( haldi )
1/4 teaspoon garam masala
2 tablespoons finely chopped cilantro ( coriander leaf )
1/4 cup milk
oil ( for frying )
4 tablespoons oil
1/2 cup water
Nita Mehta's Shahi Kaaju Aloo with Crispy Potatoes and Cashews is a delicious vegetarian dish originating from North India. Instructions

1.Peel potatoes and slice them. Soak them in water.
2.Grind the cashews soaked in water.
3.Take 1/4 cup curd in a bowl. Add the ground cashew paste, 1/2 tbsp ginger, 1 tsp garlic, and mix well. Keep aside.
4.Heat oil in a kadhai and fry the soaked potatoes until crisp and brown. Drain onto an absorbent paper and keep aside. The fried potatoes can be made in advance and stored in the refrigerator or at room temperature for later use.
5.To make the gravy heat 4 tbsp oil in a kadhai. Add 1/2 tbsp black cumin and 1 bay leaf. When cumin crackles, add 1 cup finely chopped onions and fry until golden brown.
6.Add 1/4 tsp turmeric powder, 1/4 tsp garam masala and sauté for 30 seconds.
7.Add above prepared cashew-curd mixture. Fry for 4-5 minutes.
8.Add 1/4 cup milk, 1/2 cup water, salt to taste, and let it cook for 3-4 minutes.
9.Finally, add 2 tbsp finely chopped coriander leaves. Serve hot with crispy fried potatoes and steamed rice.
