Ingredients

2 tablespoons peanut oil

Instructions

1.In a small bowl, mix together rice vinegar, salt, water, and dashi.

4.Add 1/3 of the mashed baby shrimp to the pan and cook for another 1-2 minutes.
5.Pour 1/3 of the egg mixture into the pan, swirling it around to coat the bottom evenly. Cook for about 2 minutes or until the bottom is set.
6.Carefully roll up the egg from one side to the other, creating a long roll. Slide the roll to one side of the pan.
7.Repeat steps 3-6 two more times with the remaining ingredients. Let the egg rolls cool for a few minutes, then cut into small rounds before serving.
