Ingredients

3 lbs sirloin , cut into bit sized pieces ( Any braising type beef will do )
2 quarts beef stock
6 carrots , peeled and cut into chunks
3 large celery ribs , cut into chunks
1 large onion , Use more if you like . DH does not like onion , so I keep the amount smallish
1 lb kale , stem removed and cut into 1-inch pieces
1 lb collard greens , stem removed and cut into 1-inch pieces
2 springs rosemary
1 tablespoon thyme
2 teaspoons salt , approx
2/3 cup wild rice
3 tablespoons balsamic vinegar
1 cup sour cream

Instructions

1.In a large pot, brown the beef over medium-high heat.

4.Add the wild rice and continue to simmer until the rice is cooked through and tender, about 30-40 minutes.
