1 medium tomatoes , chopped
10 ounces fresh spinach
4 medium onions
2 medium tomatoes , whole
2 teaspoons cornstarch
1 tablespoon cold water

Instructions

1.Preheat oven to 325°F.
2.In a large bowl, mix together the stewing beef, ginger ale, crushed red pepper flakes, black pepper, chopped tomatoes, and half of the chopped onions.
3.Pour the mixture into an oven-safe pot with a tight-fitting lid.
4.Cut the fresh spinach into bite-sized pieces and layer it over the beef mixture.
5.Cut the remaining onions in quarters and place them over the spinach.
6.Place the whole tomatoes on top.
7.Cover the pot with the lid and bake for 2–3 hours, or until the beef is tender.
8.In a small bowl, mix together the cornstarch and cold water until smooth.
9.Remove the pot from the oven and transfer the beef, vegetables, and tomato to a large serving bowl.
10.Stir the cornstarch mixture into the juices left in the pot and cook on medium heat until thickened into a gravy.
11.Pour the gravy over the stew and serve warm with rice or bread.
