Ingredients

1 onion , peeled , halved and thinly sliced into half-moons
1/2 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
2 cloves
1/2 teaspoon mustard seeds
4 dried curry leaves ( optional )
2 teaspoons salt
fresh ground black pepper
1 cup green lentil ( french green is suggested )
1 cup basmati rice

Instructions

1.Pick gently through the lentils to remove any debris, and rinse in a fine sieve under cold running water. Set aside.
2.Heat the oil in a large frying pan over medium heat until it shimmers. Add the onions and stir to coat in the oil. Cook, stirring occasionally, for 5 minutes or until starting to brown.
3.Add all the spices and salt and stir well, then let cook, stirring occasionally, for about 3 minutes or until the spices have darkened and are fragrant.
4.Add the lentils, rice, and 2 cups of water to the pan and stir well. Bring to the boil, then reduce heat to low and cover the pan with a tight-fitting lid. Cook for 18-20 minutes, or until the water is absorbed and the rice is tender.
5.Remove from the heat and let sit, covered, for 5 minutes before fluffing the pilaf with a fork. Serve hot or warm.
